Summer is just around the corner, and as much as it is my favorite season of the year, I don't think many people like dealing with super humid weather. Hot and humid weather can make you feel exhausted and lose your appetite. Therefore, I decided to share a popular Japanese summer food called "somen", which are white noodles made of wheat flour that's served cold. When I was little I visited my grandparents in Japan every summer, and my grandmother always made somen for my brother and I. So in this episode, I will be sharing my grandmoter's nostalgic recipe and make it into a colorful and kawaii Somen Bento! :)

6月も終わりに近づき、そろそろ夏本番ですね。
ということで、今回は夏にピッタリな「ひんやり!そうめん弁当」を作りますshineshine
カラフルなそうめんを可愛くトッピングしたお弁当です!!

りぼん INGREDIENTS りぼん
*For one person. Please adjust amount according to servings*

- Somen and Toppings -
Somen (you can find white and/or colored ones at Japanese supermarkets!)
Seaweed paper (cut into thin strips)
Tomato
Cold Shabu Shabu Pork
Shrimp
Eggs (cooked and thinly cut)
Sliced Cucumbers
Ginger
Ham
Scallions

- Tsuyu / Dipping Sauce -
Water (1 cup)
Bonito Powder (1 tablespoon)
Sugar (4 tablespoons)
Rice Wine a.k.a mirin (1/2 cup)
Soy Sauce (1/2 cup)

★Tip for the Tsuyu★
As I mention in the episode, it is best to make the tsuyu (dipping sauce) the night before so that you can store it in the fridge to make it cold. The somen will become more appetizing and delicious! When eaten at home, somen is usually soaked in a bowl of water and ice so you can make the tsuyu right before you eat it (since the somen itself would be very cold). However, that will gradually make the tsuyu taste watery so I personally recommend making it ahead of time for this bento. :) I also suggest adding some grated ginger and chopped scallions in the tsuyu right before you eat it to make it more enjoyable! I hope you will all have fun making this delightful summer recipe.

In this "Kawaii Bento" episode, I'd like to share an easy-to-make "Vegetarian Sushi Roll Bento!" Some of you may think vegetarian recipes are less tasty, but this is veggie sushi roll is actually sweet and healthy. It'll be a wonderful bento if you who want something filling + low in calories. :)

カロリー低めでおなかも満たされるレシピshine
作り方もとてもシンプルで、少し甘辛な食べやすいロールです。

Dried Shiitake Mushrooms (2 pieces)
Carrot (1/4)
Fried Bean Curd (2 pieces)

Mushroom Stock (1/2 cup)
Sugar (1 1/2 tablespoon)
Sweet Cooking Rice Wine (2 tablespoons)
Cooking Sake (1 tablespoon)
Soy Sauce (1 teaspoon)
Salt (1 teaspoon if you'd like)
Brown Rice (1 cup)
Vinegar (1 1/2 tablespoons)
Sugar (1 tablespoon)
Salt (1 teaspoon if you'd like)

Rice + Nori (Seaweed Paper) + Umeboshi - Noriben

White rice and Brown rice (half and half of 130g. 150g for male)
White sesame seeds (1/2~1 teaspoon)
Nori (1/2 sheet)
Soy Sauce

Ginger Chicken
Chicken breast (120g)
Minced garlic (1/2 teaspoon)

*Marinating Sauce* (to soak flavor into chicken)
Grated ginger (1/2 teaspoon)
Soy sauce (1/2 tablespoon)
Cooking sake or Red wine (1/2 tablespoon)
Potato starch or corn starch(1 tablespoon)
Pepper (to your liking)

*Finishing Sauce*
Chopped scallions (1/4 cup)
Grated ginger (1 tablespoon)
Soy sauce (1~2 tablespoons)
Cooking sake or Red wine (1~2 tablespoons)
Pepper (to your liking)

Colorful Salad
Broccoli
Avocado (1/4, or if small, 1/2)
Lemon juice (from lemon)
Tomatoes

*Dressing*
Olive oil (1/2~1 tablespoon)
Balsamic vinegar (1 tablespoon)
Salt & pepper (to your liking)
Honey (1/2 teaspoon)

- Rice (approx 1 1/2 cups)
- Parmesan cheese (or any kind of white cheese)
- Nori (Japanese seaweed paper)
- Taku-an slices (pickled radish)
- Quail eggs
- Bacon
- Asparagus

Welcome to my TV directing series, "Kawaii Bento!"
Last year, I made a Bihada Bento ("bihada" means beautiful skin in Japanese) using chicken and edamame. In today's episode, I will be sharing a new Bihada Bento with salmon as the main ingredient! It's a healthy bento full of astaxanthin, beta-carotene, and lycopene which all help to create smoother, softer, and healthier skin. :D

Salmon (please slice to your desired size)
Miso (the amount to coat the entire salmon evenly)
Carrot (1/4)
Spinach (to your liking)
Soy Sauce (2 teaspoons)
Mirin, a.k.a. sweet wake for seasoning (2 teaspoons)
Sesame oil (1/2 teaspoon)
Red Pepper (1/2)
Tomato (1/2)
Olive oil (to your liking)


りぼん世界のKawaii Bento (Sekai no Kawaii Bento = Kawaii Bentos from around the Globe!) りぼん

This time, I would like to share the Brown Rice Burger Bento made by my viewer, Mr. Heeley!shine He did a Take 1 (left) with brown rice, however, the brown rice didn't stick well together even if he used potato starch like I did... and the buns ended up falling apart. >< However, when he did a Take 2 (right) with white rice, he was able to make the buns perfectly (without even having to use any bun-shaping tools)! Thank you very much, Mr. Heeley for taking the time to make this bento twice! It looks absolutelye DELICIOUS!! :)

Like I mentioned in this episode, you can use white rice, but if you'd like to use brown rice as a healthier option, try selecting a shorter grain type and cook with more water than usual so the rice gets stickier.
